If you haven’t picked up the summer issue of the Minnesota Sporting Journal, this recipe alone is worth picking it up. I finally tried the recipe by Chef Robert J. King, and boy was it a treat! I prepared the fish tacos as the recipe stated with some fresh perch as my medium. The recipe calls for Japanese Panko breaded fried fish, complemented with avocado, mayo and mandarin oranges. The fish was fried to a golden brown, crunchy consistency, which created a beautiful contrast between the flavor of the breading and the perch. I was slightly uneasy about the mandarin oranges and the avocado and if they would overpower the fish.
The pièce de résistance was the combination of the three and how they complimented each other so desirably. Replacing Avocado with a spicy guacamole would be an exquisite addition to this recipe. Be sure to pick up this summer copy to try this amazing recipe!
